Aubergine sandwich with Fresh Goat Cheese

4 servings:

  • 2 red peppers cut in slices/li>
  • 2 big red tomatoes cut in thick slices
  • 2 aubergines cut in thick slices
  • 1/2 cup balsamic vinegar
  • Salt and pepper
  • 1/2 cup olive oil
  • 1/2 cup pesto sauce
  • 8 thick slices 'Lanzarote or Rancho Vistalegre' Goat Cheese
  • Fresh basil


Place aubergine slices on a plate, sprinkle salt and let rest for 10 minutes until they release water (this process takes away the bitterness).

In a bowl mix the olive oil with the balsamic vinegar, salt and pepper. Let the slices of tomatoes and pepper marinate in the mixture for a while.

On a hot sheet, fry the tomatoes and pepper until tender, the aubergines are then fried in the same fashion. Smear a slice of aubergine with the pesto sauce and place on top a slice of tomato, a few peppers, a slice of the goat cheese, a fresh basil leaf and top with the other aubergine slice.
