Aubergine sandwich with Fresh Goat Cheese
Ingredients
4 servings:
- 2 red peppers cut in slices/li>
- 2 big red tomatoes cut in thick slices
- 2 aubergines cut in thick slices
- 1/2 cup balsamic vinegar
- Salt and pepper
- 1/2 cup olive oil
- 1/2 cup pesto sauce
- 8 thick slices 'Lanzarote or Rancho Vistalegre' Goat Cheese
- Fresh basil
Preparation
Place aubergine slices on a plate, sprinkle salt and let rest for 10 minutes until they release water (this process takes away the bitterness).
In a bowl mix the olive oil with the balsamic vinegar, salt and pepper. Let the slices of tomatoes and pepper marinate in the mixture for a while.
On a hot sheet, fry the tomatoes and pepper until tender, the aubergines are then fried in the same fashion. Smear a slice of aubergine with the pesto sauce and place on top a slice of tomato, a few peppers, a slice of the goat cheese, a fresh basil leaf and top with the other aubergine slice.
