Chicken breasts with spinach and Fresh Goat Cheese filling
Ingredients
6 servings:
- 6 skinless chicken breast halves (750 g)
- 3/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/2 teaspoon dried basil
- 250 g spinach
- 1 'Lanzarote or Rancho Vistalegre' Goat Cheese natural flavor log
- 1/2 cup butter (125 ml)
- 2 cups of grated bread (120 g)
Preparation
Turn on oven to 210 °C. Cover a baking pan with oil to keep breasts from sticking.
Roll flat the chicken breasts until they are around 3 mm thick. Sprinkle the flattened breasts with salt, pepper and basil. Cover them with spinach and the crumbled goat cheese. Roll the breasts and keep secured with a tooth pick.
Smear the rolls with butter and cover with the grated bread. Place on the baking pan and cook in the oven for 35 minutes or until the bread in golden brown and the meat fully cocked. Take away the tooth picks and serve while still hot.
